On 5th June 2024 Norwich completed the signing of Panamanian left-sided centre-back Jose Cordoba from Bulgarian side Levski Sofia, beating off interest from Rangers, Danish side Brondby, Belgian side Union Saint-Gilloise and French clubs Lille and Brest. He will officially join on the start of the 2024 transfer window for €3.5m, subject to international clearance, and will become Johannes Hoff Thorup's first signing. Jose made 25 league appearances in Bulgaria in 2023/24, plus six appearances in the Europa Conference League, before Levski's exit at the hands of Bundesliga side Eintracht Frankfurt at the qualifying stage.

He began his career at Independiente de La Chorrera in Panama. In 2020 he transferred on loan to Spanish side Celta Vigo but didn't manage to break through in the senior team and made appearances mainly with the reserve team. He had two trials with Bulgarian side Etar before they signed him on loan . Córdoba made ten appearances in the Bulgarian First League during the second half of the 2020/21. After they were relegated, he stayed and played eight games in the second season before joining Levski Sofia in September 2021 initially on loan. This was turned permanent in April 2022.

In March 2022 he made his debut for Panama in the 2022 World Cup qualification clash with Canada, playing the full 90 minutes in a 1-0 win. At the time of his move to Norwich, he had 12 caps for Panama. In June 2024 he played for Panama in the Copa America making his first appearance in a 3-1 defeat to Uruguay.

He made his Norwich debut on 17th August 2024 as a 58th minute substitute in the 2-2 home draw with Blackburn. His first start was the 4-0 EFL Cup defeat to Crystal Palace on 27th August.
