Jos started his career with Dutch Eredivisie club Heerenveen in 2003, where he was capped by Holland at Under-19 level, making 14 appearances before moving to Zwolle, on loan, between 2004 and 2006. He played 45 times for Zwolle, primarily at left-back. In 2006 he moved to Austrian Erste Liga side Kapfenberger SV and one year later moved to Finnish side Inter Turku. During his time in Finland he won both the 2008 Veikkausliiga and 2008 League Cup as well as being named the defender of the year twice.

Swedish side AIK Stockholm signed him in January 2009 and he won the 2009 Allsvenskan and the 2009 Svenska Cupen. He moved to Scottish Premier League side Celtic in January 2010 for a fee of around £2million. Injuries limited him to seven league appearances. He was loaned out to Danish Superliga club FC Copenhagen in January 2011. He then moved on loan to English Championship club Southampton shortly after the start of the 2011–12 season before joining them permanently in December 2011. He was a regular throughout the season helping them win promotion to the Premier League.

He had made 77 appearances for the Saints at the time of his loan to Norwich. Norwich were recomended to him by his fellow Celtic teammate Gary Hooper.

He made his Norwich debut in the 4-2 away win at Cardiff on 13th September 2014. He made six appaearances in total for Norwich before his loan was terminated on 25th January 2015. The following day, he was loaned to Millwall.

Hooiveld and Millwall were releaged to League One on 28th April 2015 when Rotherham beat Reading 2-1 consigning Wigan and Millwall to the two remaining relegation spots along with already relegated Blackpool. He was released by Southampton at the end of the 2014/15 season.

On 10th July 2015, he re-signed for AIK on a two and a half year deal.

He left Sweden at the end of the January 2017 transfer window, returning to Holland to sign for FC Twente. He made 21 appearances for Twente.

On 5th June 2018, Hooiveld signed for California-based Oragne County of the United Soccer League.

Although reported to have retired in December 2018, he joined Dutch side VV Pelikaan-S
