Pollock became a first year Academy scholar at Norwich City in July
2015 He joined Norwich as an Under-9 and plays in midfield.
On 5th May 2017, it was reported that he would be offered a professional contract with the Canaries
In the autumn of 2017, he was loaned to Norwich United. When his Norwich contract ended on 31st December 2017, he signed for Norwich United until the end of the 2017/18 season. he had played 21 times whilst on loan.
On 7th June 2008, he joined Lowestoft alongside former Wroxham striker Connor Ingram and Connor Deeks.
Lowestoft were relegated from the Southern League Premier Central division in late April 2022.
On 11th October 2022 he was loaned to Gorleston having made only two appearances for Lowestoft so far that season.
